Alhamdulillah, we are at 2nd Ramadhan now! MashaAllah, I'm feeling great today. Thank you Allah for another chance of living. ^_^
Now, I just wanna share a Raya recipe since I had tried this a day before Ramadhan. It's a fluffy, fruity cookies! Awh! :')
Ow ya! This recipe is extracted from a book that I just bought last Wednesday! Omaigosh, all the recipes inside are so easy to made and all the ingredients are just available in Malaysia.. Why I said so? Because, usually overseas recipe books are quite difficult to do because of the ingredients ie the wheat, wine etc. And, I'm feeling like a bakers when I do have this book! Lalala~
Okay! Please stop the crap. Frankly speaking, the #1 recipe is extracted from 'Everyday Muffins & Bakes' from Love Food.
Let's check it out!!
Rock Drops (Makes 8 BIG cookies or 20-25 small cookies) [Hasilkan 8 cookies BESAR atau 20-25 cookies kecil]
English Version [Malay version]
Ingredients [Bahan2]
100g butter, cut into small pieces, plus extra for greasing [100g butter, dipotong kecil dan sedikit untuk gris]
200g plain flour [200g tepung gandum]
2 tsp baking powder [2 sudu kecil serbuk penaik]
75g golden caster sugar (I used white sugar and just blend it finely) [75g gula kastor (sy guna gula putih dan kisar halus]
100g sultanas / raisins [100g sultana / kismis]
25g glace cherries, finely chopped (I didn't used this. not available in the kitchen) [25g ceri, dipotong nipis (sy tak guna, sebab takde kat dapur]
1 egg, beaten [1 biji telur, dipukul]
2 tbsp milk [2 sudu besar susu]
Method [Cara2]
1. Lightly grease a baking sheet, large enough for 8 big rock drops, with a little butter (I don't have baking sheet, so, I just grease the baking tray). And, heat the oven, 190C for 15minutes.
2. Sift the flour and baking powder into a mixing bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, sultanas/raisins and chopped glace cherries (I didn't put these), mixing well. Add the beaten egg and the milk to the mixture and mix to form a soft dough. (use spoon!) ]
3. Spoon 8 mounds ( I made 25 pieces and please don't roll it. Just take it as it is) of the mixture onto the prepared baking sheet (or the baking tray), spacing the well apart as they will spread while cooking. Bake in a preheated oven, 190C, for 15-20 minutes (I used to make small pieces, so, it just took 10-15mins) or until firm to the touch.
4. Remove the rock drops from the baking sheet / baking tray. Either serve immediately or transfer to a wire rack to cool before serving (I'm preferred to serve hot! Just so uuumpph!)
Selamat mencuba!
